miso quinoa salad edit

Extremely easy salad. Makes 3-4 servings.



  1. Rinse quinoa, then cook with 2 cups of water
  2. Combine lime juice, miso, chopped ginger + garlic, olive oil, and pepper to taste to make a dressing
  3. Combine cooked quinoa, corn, edamame, and dressing. Add feta and cilantro if desired/if you have them on hand.


Keep very well as leftovers/meal prep.
