miso quinoa salad edit
Extremely easy salad. Makes 3-4 servings.
Ingredients
- 1 cup of quinoa
- 1 cup edamame
- 1 cup corn (fresh or frozen is good)
- lime juice
- miso
- ginger
- garlic
- olive oil
- pepper
- optional toppings: feta, cilantro
Instructions
- Rinse quinoa, then cook with 2 cups of water
- Combine lime juice, miso, chopped ginger + garlic, olive oil, and pepper to taste to make a dressing
- Combine cooked quinoa, corn, edamame, and dressing. Add feta and cilantro if desired/if you have them on hand.
Notes
Keep very well as leftovers/meal prep.
