Vegt. butter chicken edit
Feeds 2-3 people. Easy.
Ingredients
- 1 yellow/white onion
- 4 cloves of garlic
- 2 tsp of cumin
- 3-4 tsp of curry powder
- 1-3 tsp of cayenne (depending on spiciness preference)
- 1/2 cup of vegetable stock
- 1 and 1/2 cups of tomato sauce
- 2 cups of chickpeas
- 1 freshly squeezed lime
- 1/4 cup of almond butter
- 1/2 cup of cocnut milk
- salt (to taste)
- butter for cooking
Instructions
- Cook finely diced onion with some butter in a pot or deep pan
- Add garlic and all the spices and cook until fragrant
- Deglaze pan with veggie stock, then add tomato sauce, chickpeas, and lime juice
- Let mixture simmer for 20-25 minutes until chickpeas are soft
- Remove from the heat and stir in almond butter and coconut milk
- Season with salt and additional lime to taste
Notes
Almond butter can be substituted with other nut butters in a pinch (but peanut butter is not recommended). Replace butter with oil to make the recipie vegan! Pairs really well with naan or fragrant rice. Recipie slightly adapted from always nourished blog (vegan butter chickpeas).
